Have A Picky Eater? Pizza Never Fails!

Growing up, my grandmother would always try to find sneaky ways to make us eat our fruits and vegetables. Of course, at the time, we had no idea. Being that pizza was and still is one of my favorite foods, pizza never fails! Disguise it with anything, and you have a meal that no kid can turn down. Well, almost no kid.






Here is a twist on the traditional chicken pot pie, perfect for kids and adults. Use a slightly larger ramekin for an adult size portion serving and serve it with a side salad; or make it in a smaller portion for kids and serve with veggie sticks or other side.

Pizza Pot Pies



3 cups sauce (store bought of any brand is perfect!)



2 cups diced roasted chicken



2 cups broccoli cut into small, bite size pieces



***I had frozen mixed veggies and put them in the food processor. Harder for the picky eaters eye to find***



1 1/2 cups diced mozzarella cheese



1/2 tsp salt



1/4 ground black pepper



1 1/2 pounds purchased pizza dough (one can of Pillsbury will do the trick)



1/3 c olive oil



6 tbs freshly grated Parmesan






Special equipment: 6 (10 oz ramekins)









Preheat oven to 400. In a large bowl, combine the tomato sauce, chicken, broccoli mixture, mozzarella, salt and pepper. Stir to combine. Divide the chicken mix evenly among the ramekins. Roll out the pizza dough 1/2 to 3/4 inch thick, and use a paring knife to cut circles that are 1 inch larger in diameter than the ramekins. Set the circles of dough over the edges of each ramekin. Brush the pizza crust with the olive oil and sprinkle with the Parmesan cheese. Cut a small slit in the top with the knife. Bake until the pizza crust is golden, about 25 minutes. Remove and cool slightly.






These turned out delicious and were loved by the whole family!! If you make this, you'll have to tell me how it turns out :)
